​​​In like a Lion, Out like a Lamb is part of our grade school prophecy that Spring is in effect after the threat of weather with the change in season. And that change, like with finding every four-leafed clover, we get a little luck as we enter Spring, in nuance, unscathed.

We, with those who are so gracious culturally to let us Americans attend, tornado the month ...as happy as Larry, for one day at least, in our green for St. Patrick’s Day. Big hats and large scarves. Sparkled face paint and yeeeessss, Beer. Green Beer on our night to feast... But, why feast on just the day that death rang for our favorite lad and saint? Let’s Eat like a King, at least for breakfast, and go Full Irish.

The Irish Breakfast speaks to the heart of your stomach. Rashers (bacon), Bangers (link sausage), Black and white pudding (pork meat and blood), Mushrooms, Grilled Tomatoes, Baked Beans, Potatoes, Bubble and Squeak (a potato pie), Irish Soda Toast with butter or marmalade and Eggs. To Drink: Tea... Plenty of tea! Or for lunch... A Smithwick’s. 

We order our Irish Breakfast in nuance How It Comes (eggs over-easy). But there are so many ways that Irish and English breakfasts are performed here to suit American tastes.

I have seen ham substituted for Rashers. No Pudding whatsoever. And I have rarely if at all seen Irish soda toast here. Normally, it’s left to sourdough or white bread, instead. And Potatoes... Wow. The leftovers from the previous night’s meal... Not quite. Fried, hash or a potato cake that may not make the Boxty.  

But we should know what we are eating and the significance as we celebrate with the 

culture of a proud people who want it done right. The idea is a big breakfast for the Irish workman before the day... Let’s Eat!
